It depends on what you want to do with your degrees. If you're interested in a career in public accounting, I don't know that the degree in economics is going to be huge benefit for you. The fact that you have two degrees might serve to set you apart from other candidates, but as far as practical applicability goes, its not too helpful. In public accounting, a degree in computer science can help out in some areas, but a minor in computer science will not make a difference.
If you're not sure where you want to take your career, I would advise going for the double major in accounting and economics. Speaking as an employer myself, a minor doesn't carry a lot of weight for most potential employers.
